Som sig bör är det de lokala druvorna corvina veronese, rondinella och molinara från familjens egna odlingar i Valpolicella som använts vid framställningen. Det ger vinet en stil som påminner en hel del om en av familjens absoluta specialitet, amaronen. Den fruktiga karaktären hos Tommasi Valpolicella är dock mycket ungdomligare med både doft och smak av körsbär, hallon, röda bär, örter och vissa fattoner. Tommasi Valpolicella har i likhet med amaronen lagrats på slavonska ekfat.
