	14.09.2018	Appassimento fortæller, at vinen er fremstillet på samme måde som de væsentlig dyrere Amarone-vine fra Valpolicella i Norditalien. Altså ved at lade en del af druerne tørre på bastmåtter eller direkte på vinstokkene, før de sættes til gæring på ståltanke. Derved opnås en større smagskoncentration af frugt og mere sukker til alkoholudviklingen. På Sicilien serverer man denne vin til couscous og pastaretter. denkorteavis.dk
